This recipe started out without such a long-winded name; it's actually Quaker's Vanishing Oatmeal Raisin Cookies, the recipe that comes with oatmeal. But I'm not a huge fan of raisins, so I use chocolate chips and walnuts instead.
1/2 lb butter, softened
1 cup firmly packed brown sugar
2 eggs
1tsp vanilla
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
3 cups oats, uncooked
1 cup chocolate chips
walnuts to taste (you know, a pack or two. whatever.)
Pre-heat oven to 350. In large bowl beat butter and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats, chocolate chips, and nuts; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 10-12 minutes or until light golden brown. Cool 1 minute on cookie sheet; remove to wire rack.
